You know how they say that bread machines require meticulous measurements, respect for the ingredient order and an exact recipe?

I read that too. Only I’m too stubborn hard-headed adventuress to listen. I want to have daily fresh whole wheat bread, I do not have a bakery near by, nor do I always have the time/energy to bake it myself. And oh yeah, I refuse to continue and eat these sliced pieces of brown sponge our local grocer calls bread.

It never ceases to amaze me how difficult it is to find a decent  recipe for a basic whole wheat bread machine loaf. None of my many cookbooks have it (although they ALL feature the same peculiar dill and cheese loaf that I will have to try one of these days), and even the vast abyss of the Internet fails to deliver my salvation.

I tried to follow the basic whole grain recipe provided by my bread machine maker, but the result was rather disappointing. I bet they counted on me using one of these fancy “bread flours”. I guess they don’t know me very well over there at the bread machine factory. The bread came out decent enough for that one night, but I wasn’t feeling any love the next morning, when it developed a dense, unpleasant aftertaste.

After a while I figured that some rule breaking are in order. My recent success required breaking all of the above. I used whole wheat instead of the white flour indicated. I used the basic bread cycle instead that of the whole grain. I also added water,sugar and salt to the recipe and substituted oil for the butter.

The result? Much better! My illegal offspring featured a better, fluffier texture, an aftertaste free bite and a much better life expectancy. It tasted good even the third morning.

Unfortunately,my lamentable  perfectionism is not yet satisfied. My bread does get denser with time and does not keep its freshness long enough to make me happy. It is not yet Perfect.

Bur certainly, it is a giant step forward from the pricey supermarket sponge.

If any of you have a bread machine recipe to share, please, by all means, sent it my way. I will be happy to try it and feature it here on the blog. Until then, here is my daily bread.

Simple whole wheat bread machine bread


1 1/4 cups warm water (it’s difficult to give an exact amount. The bread should come together in a neat ball while kneaded. Add water if it looks too dry)
1 Tbsp oil (canola or olive, it’s up to you)
1 Tbsp brown sugar
1 Tbsp milk powder
2 tsp salt
2 cups whole wheat flour
1 cup all-purpose flour
1 1/2 tsp bread machine yeast

You can add the ingredients in the above mentioned order to your machine, or you can do as I do and mix the water, oil and sugar together first.  Next time around I will try to add the yeast to my water mix. I know they insist that the yeast goes in last, but I simply cannot resist the temptation.

Once your ingredients are in, turn the machine on its basic bread cycle. Mine indicates a 500 gr loaf for this cycle.

Don’t be afraid to open the lid and look at your bread in the initial stages of the cycle. I find that it’s the only way to figure if you added sufficient amount of liquid.

Have you tried using white whole wheat flour? It’s not bleached, just from a different type of grain.
