Please take a moment to notice the absence of my beloved SLR camera. This pic was taken with a point and shoot replacement which is, well, convenient. Shiver. This post has been lying in my dusty drafts folder for nearly a week now. This is how long it took me to temporarily incapacitate my obsessive perfectionist evil twin and decide to publish this recipe, lamentable lack of noteworthy photo and all.
Hideous photos aside. This chili kicks butt.
Quick and easy Chili Con Carne
500 gr (about 2lb) lean ground beef
3 Tbsp canola or vegetable oil
1 large onion finely chopped
1 large green pepper finely chopped
1 Tbsp minced garlic
1 tsp chili powder
11/2 tsp cumin
1 1/2 tsp dry oregano
1 (800 ml/28 oz) can crushed tomatoes
1 can (540ml/19 oz)red beans, drained and rinsed
1 Tbsp brown sugar
salt and pepper to taste
Place a pan and a large pot on your stove-top. In the pan, place ground meat with 1 Tbsp oil and brown on high heat, mixing and breaking the meat for about 10 minutes. At the same time, heat (med-high this time) the remaining 2 Tbsp oil in the pot and brown your onions. When the 10 minutes are up, turn the heat off under the meat and add the green pepper to your onions. Saute together for a few minutes, just until the peppers soften up. Add garlic and saute together for 2-3 minutes. Add meat and spices and mix well, just until the spices begin to smell good. Add tomatoes, beans, sugar, salt and pepper and mix well. Turn heat to low and simmer together for an hour, then taste and correct seasoning according to taste.
Serve with tortilla chips, grated cheese, sliced green onions, white rice or anything else you like with your chili.
