Tortilla Pizza

You don’t really want to cook in this heat do you? I was about to post this tasty meatball soup recipe but then took one look at the pictures of the steamy bowl and gave it up. It’s just too hot outside for eating meatball soup and please comment to tell me if I’m wrong.

When it’s too hot, we eat sandwiches. After three days or so, we tire of sandwiches. Pizza around here is not only expensive, it is in such high demand (one and only pizza maker) that it takes over an hour to receive your order. When we got married, my mother gave my new husband this one advice: feed her well. You don’t know me when I’m hungry. Waiting for an hour is just out of the question if you value your life.

Tortilla pizza is easy-peasy, crunchy-munchy and as my husband likes to say, el-cheapo. Not to mention that the calorie count of one or even two whole wheat tortillas are significantly lower than those of a fatty thick white pizza crust. The toppings can be as simple or fancy as you wish them to be. Since we feed toddlers, we usually go with simple. Pizza sauce, Mozzarella cheese, olives, mushrooms, peppers and even pepperoni (real or veggie). I like to spread the ingredients on our dining table and let everyone assemble their own pizza creation. Very kid friendly.

This ain’t really a recipe, but more of an idea. Here’s how I do it:

Bake your tortillas in a 400F (200C) oven, on a baking sheet or directly on the oven rack for 5-7 minutes, until crisp. Transfer to a baking sheet and top with pizza sauce and your choice of toppings. Sprinkle grated cheese and put under the broiler until the cheese melts. Cut into wedges and enjoy!
