Fluffy whole wheat vegan pancakes

I am not vegan. But that does not mean that I cannot appreciate a good pancake when I sink my teeth into one. This recipe was inspired by my good friend T. She is vegan. She also happens to be tall, blond, slim and witty. Who knows, maybe eating more vegan would shake some of that fairy dust on me as well. These DO NOT taste like health food in any way, shape or form. They are as sinful as they come.

Fluffy Whole Wheat Vegan Pancakes

Ingredients

1/2 cup whole wheat flour
1/2 cup all-purpose flour
1 Tbsp baking powder
pinch of salt
1/4 cup brown sugar
1 Tbsp Canola oil
1 cup soy milk
1 tsp vanilla extract

Preparation:

1. In a mixing bowl, mix together the dry ingredients. Mix wet ingredients in a separate  bowl.

2. Add wet mix to the dry one and stir to combine. Do not over mix.

3. Heat a non stick pan on medium heat and lightly coat with oil spray. Pour spoonfuls of batter on the pan and form little circles. When bubbles start to appear on the surface, flip the pancakes and cook until golden.

This recipe yielded about 14 small fluffy pancakes that were served with honey and butter (sorry T).

I made these this morning for breakfast. SO delicious! Thank you! They were definitely the most fluffy vegan pancakes I have ever made and garnered rave reviews from the non-vegan chef (and self professed pancake-phile) in the house. Amazing! They have a soft chewy inside that makes you swear they’re made with eggs. I think the brown sugar is the key here… that gives it the crisp outside and buttery taste. I substituted whole wheat pastry flour for the whole wheat flour and almond milk instead of soy milk. Also added blueberries. Served with Earth Balance Buttery spread and maple syrup. Yum! We’ll be making these again!

AMAZING recipe. My husband is vegan and doesn’t eat baking soda, so it’s really hard to make pancakes that aren’t like rocks made for skipping across a lake. I googled this one, and it’s great! I substituted applesauce for the oil, and you couldn’t even tell the difference!

Sorry Aman but I truly do not know. I never tried this recipe with real milk..try it and come back to tell us!
